Muffins and specially brownie muffins need no introduction. They are easy to make and can be prepared in a jiffy , use this recipe as a base and to create your own favorite muffins
Let’s get going and make a batch of fudgy brownie muffins !!
Ingredients
All Purpose flour (Maida) : Two third cup
Powdered sugar – 1 cup
Chocolate Chips : Half cup
Coffee powder: 1 tsp
Salt : One fourth tsp
Cococa Powder – 2 tbsp.
Baking Powder- 1/4th tsp.
Warm Water : 2 tbsp
Oil- Half cup, I use regular vegetable oil
Eggs- Two at room temperature
Vanilla Essence – Few drops
Muffin Moulds- 8-10
Method
Preheat oven at 180C
Mix and sieve the dry ingredients ( flour, salt, baking powder, cocoa powder ) and keep aside. In a bowl, microwave chocochips for twenty seconds or maybe for few more seconds till you have a chocolate paste ready. Be careful and don’t over heat the chocochips.
Add coffee powder to warm water and keep aside. In a bowl. mix powdered sugar with oil and whisk for few seconds, add eggs and mix well. Stir in the coffee mix , vanilla essence and again whisk for few seconds.
Now add the chocolate paste, dry ingredients and whisk till mixed well. Be careful not to over-mix the batter as this will make the muffins hard.
Spoon into the muffin pans, filling each cup about two-thirds full. Bake for about 20 to 25 minutes each.
Serve with coffee or with ice cream on the side and enjoy !!
