Being a working woman, I enjoy the dual role of a homemaker and a professional. While, office life takes away eighty percent of my time, like all working women, I constantly try to be a good homemaker too. Last year, I had made a resolution to celebrate all festivals by making something festive. So this mawa kachori , was made on Janamashtami, birthday of Lord Krishna.
I have a major sweet tooth but try and be reasonable with the amount of sugar, I add to my recipes. So let’s begin
Ingredients
All purpose flour (Maida)- 2 cup
Besan – Two tbsp.
Ghee or clarified butter for making the dough- 2 tbsp.
Water for kneading the dough
Filling
Khoya- One cup
Saffron- Few strands
Cardamom powder- 1 tsp.
Powdered sugar- Three fourth cup
Dry fruits of your choice- one fourth cup and this should be chopped
Sugar syrup
Water – One cup and one third cup
Sugar- one cup
Saffron- Few strands
Method
1- Sieve Maida, besan in a bowl
2- Add ghee and mix into the maida and besan mixture. Now add water and bind into a soft dough.
3- Dough needs to be smooth and once done, cover and let it rest in refrigerator for fifteen minutes
4- Grate the khoya and mix with cardamom , dry fruits and keep aside
5- Prepare sugar syrup by boiling sugar , water and saffron strands
6- Once sugar syrup reaches, one thread consistency, take off from flame
7- Roll out dough into flat discs (about 4inces) in diameter
8-Place filing in center and carefully seal the kachoris
9- Heat oil in kadhai or wok and add one tbsp. ghee to get the rich feel ( I do this to avoid frying in ghee).
10-Fry the kachoris on slow flame and remove once golden brown from both sides
11- Crack the top of kachori and add a tbsp. of sugar syrup while serving.
12- Garnish with chopped pistachio but this is entirely optional.
